What is 'застройка' in Bulgarian cooking?
Застройка is the move that makes a Bulgarian soup Bulgarian. Whisk кисело мляко (yogurt) with a whole egg, slacken flour with cold water to a smooth slurry, combine the two, then temper with hot broth before pouring back into the pot. Without застройка, пилешка супа (chicken soup) is just chicken soup. With it, it’s grandma’s.
The same trick finishes other Bulgarian staples like tripe soup шкембе чорба and bean боб чорба. In this video, the Готвене за начинаещи host adds застройка at the end and signs off: « една такава супчка, си е храна за душата, освен за стомаха » (a little soup like this is food for the soul, on top of the stomach).
